Quick Apple Cake

A rich, buttery cake bakes up around apple slices placed into the batter. A topping of chopped almonds and cinnamon sugar finishes the cake so it is ready to serve warm as it comes out of the oven.

Oven temp:   375 degrees F


For 1 9-inch round cake you will need:

  • 1/2 cup butter or margarine, room temperature
  • 1/2 cup sugar
  • 3 eggs
  • 1/2 tsp. vanilla extract
  • 1 cup all-purpose flour
  • 1 large apple, pared, cored and cut into 1/4-inch-thick wedges
  • 1/4 cup sugar
  • 1 tsp. cinnamon
  • 1/4 cup coarsely chopped almonds

 
  • 1. Cream together butter and the 1/2 cup sugar. Add eggs and beat until fluffy.

  • 2. Stir in vanilla and flour, mixing well.

  • 3. Spread evenly in buttered 9-inch round cake pan.

  • 4. Place apple wedges into cake batter to form a circular pattern.

  • 5. Mix together 1/4 cup sugar and cinnamon. Sprinkle over cake.

  • 6. Sprinkle top with almonds.

  • 7. Bake at 375 degrees F for 40 min or until a wooden pick inserted in the center comes out clean.


Good served with: Scoops of vanilla or cinnamon-flavored ice cream.
