Blueberry Pastry Braid

This yeast raised pastry is prepared with a handy type of dough because it can be refrigerated from four hours to several days before shaping, rising and baking. Shop for a high quality blueberry preserve for the filling in which the berries retain their original shape.

Preparation time:   45 min
Baking time:   25 to 30 min
Oven temp:   375 degrees F
Chilling time:   4 hrs or overnight
Rising time:   1 to 2 hrs


For 3 pastry braids you will need:

  • 1/2 cup warm milk(105 degrees F to 115 degrees F)
  • 1 pkg. active dry yeast
  • 1 Tbsp. sugar
  • 3 egg yolks
  • 1 cup whipping cream
  • 3 1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tsp. salt
  • 1/2 cup (1 stick) firm butter or margarine
  • 1 cup blueberry preserves
  • Powdered sugar for garnish

 
  • 1. Combine milk, yeast and 1 Tbsp. sugar. Mix in egg yolks and cream. Set aside for 10 min.

  • 2. Blend flour, 1/4 cup sugar and salt in mixing bowl.

  • 3. Cut in butter until pieces are the size of small beans. Pour yeast mixture over. Fold just until ingredients are mixed; do not overstir or overmix.

  • 4. Cover with plastic wrap. Refrigerate 4 hrs or overnight.

  • 5. Turn dough out onto lightly floured board. Divide into 3 portions. Dust each portion with flour. Roll, one at a time, to make a rectangle, 12 by 9 inches. With knife or pastry wheel make cuts 1 inch apart as illustrated.

  • 6. Spoon 1/3 cup blueberry preserves down the center. Crisscross strips over filling to simulate a braid. (See photo) Repeat for remaining 2 portions.

  • 7. Place on greased cookie sheet. Let rise until almost doubled.

  • 8. Bake at 375 degrees F for 25 to 30 min until golden.

  • 9. Sprinkle with powdered sugar.


Tips: You may shape the breads, cover them, and refrigerate for baking the next day, if you like. Allow an extra hour for rising in a cool place if shaped breads are cold.
